Peanut Butter Cookies
1 cup peanut butter (no sugar added)
1cup medjool dates, pitted
1 egg
1 tsp baking soda
Preheat oven to 325. Line baking sheet with parchment. Process dates into a paste in a food processor. Mix date paste and all remaining ingredients until dough forms. Scoop dough by tablespoons full onto parchment. Flatten slightly with a fork in a cross cross pattern. Bake at 325 for 8-10 min.
I used the pampered chef small scoop and I got 32-36 cookies out of this.
Egg Cups
Might be the easiest recipe ever. I make these nearly every week. Our son loves them for easy breakfast and I eat them for “second breakfast.”
Chop spinach into small pieces and nearly fill each greased (use real butter)muffin tin cup. Beat 12 eggs in large bowl and pour over the spinach in the muffin tin. Bake at 350 for about 27 minutes. Let cool and refrigerate. 2 egg cups = 1 serving veggie + 1 serving protein.
**You can use any veggie you wish. I’ve used sweet peppers chopped small, or even just shredded real cheese and nitrite/ nitrate free deli meat. Enjoy!
